Auk (아욱) is a leafy green bitter vegetable.  According to various on-line sources, it’s “mallow” and/or “malvacaea,” a huge family of plants comprising 2,300 species, including some seemingly unrelated members like cotton, kola, okra, and durian.

Whatever the case, MIL made a soup of it.  The strong flavor of the soup’s base doenjang didn’t allow for much of the auk flavor to come through, leaving a slightly bitter taste similar to spinach.  But it was pretty good.
