Hotdogs with Tomato-Parmesan-Asparagus Sauce

The topping consisted of my base tomato-parmesan sauce plus the shavings of the peeled asparagus from last weekend (see 3.156 Asparagus in Sauce Hollandaise). Given the fibrous nature of asparagus skin, I minced the shavings and simmered them in the sauce for half an hour, which tenderized and turned them dark/black in appearance. I couldn’t really taste the asparagus per se, though the sauce did exude a vegetal quality. An interesting experiment that I’ll try again someday, with pasta. I was happy to have made full use of the asparagus.
