Crab-Stock Risotto with Corn & Mixed Mushrooms

A few weeks back, W had suddenly brought home a bag heaping with frozen crabs that didn’t contain much meat (“But they were on sale!!”), prompting me to make a huge vat of stock from them, which I’ve been using occasionally since (see most recently 3.178 Rice Noodles in Tomato-Parmesan-Crab Sauce with Corn). This risotto saw the last of it.
As always, I couldn’t resist the combination of corn and shellfish, which is definitely now among my signature pairings (to the extent that I have signature anythings).
