While the base remains as Japanese as ever, the additional ingredients that I’ve been tossing into the pot with these days seem to result in concoctions that bear ever less resemblance to the simple meat + onion + carrot + potato curries representing the Japanese tradition.  This time, for example, I started by sautéeing the meat in ghee, then added green beans and green lentils, plus a few curry leaves.  I wouldn’t go so far as to say that the dish became South Asian as a result – the underlying curry flavor was still distinctly Japanese – but it was interesting.
