Turkey Breast with Baguette Stuffing & Broccoli Bordelaise

Attempted to upgrade the sides but failed.
Instead of stuffing out of a box, I made my own from scratch, using a stale baguette. Everything seemed fine going into the oven, but the bread came out strangely sticky and rubbery, which I suspect was caused by whatever makes these particular baguettes from our local bakery turn into stone after a single day. I don’t bake, so I can’t even begin to speculate.
Next, with some leftover breadcrumbs, I tried preparing the broccoli à la Bordelaise. However, even though I’d parboiled the broccoli florets, they still released enough moisture to prevent the breadcrumbs from browning properly, leaving them soggy instead.
