Ginataang is a Philippine dish.  More of a general method to simmer food in coconut milk, applicable to vegetables, meats, seafoods (e.g., shrimp = hipon).

Had I faithfully followed the recipe for the ginataang hipon in the Adobo Road Cookbook, the dish probably would’ve turned out quite nicely.  However, wanting something to sop up all that creamy sauce, I added rice noodles (pancit) in the final minute.  Unfortunately, they ended up both soaking up too much of the sauce and thickening whatever was left into a goopy mess.  Though the texture made everything feel too heavy, it tasted okay.
