Casserole Chicken with Saffron Couscous in Cilantro Tomato Sauce

The chicken was cooked according to my go-to poulet poêlé technique.
The tomato sauce was pretty basic but included a ton of cilantro.
The couscous was infused with saffron.
Though not designed to be aligned with any particular cuisine, the combination of the improvised elements felt southern French, Mediterranean, with hints of North Africa.
