Clam & Ginger Soup


at Seafood Market

A few major breakthroughs tonight on menu development at this restaurant (see generally 4.263 Parros Clams…).

Prawns & Asparagus with Ginger & Onion (3.5) — same basic preparation as before (see generally 6.112 Prawns with Ginger & Onion), but with the welcome addition of asparagus; it would work just as well with broccoli; confirmed, this is the way to do jumbo prawns.
Scrambled Egg with Scallop, Black Fungus, and Scallion (3.5) — I’d also been struggling with scallops, which are so dinky that they either fail to stand on their own or get lost when mixed with other items, but they paired quite nicely here with the equally delicate egg.

Busy trying to come up with big ticket items, I haven’t yet touched soup.  As such, it has remained the same miso clam soup every time.

This clam & ginger soup — TL’s idea — may present a potential alternative.  Didn’t look like much, but the broth had a very delicate clam flavor, lightly enhanced by the ginger, a touch of sweetness.  But it needed something more, like maybe sliced straw mushrooms and/or scallions.  Stay tuned.
