Fabada Asturia is a Spanish soup/stew. White beans — traditionally fabes de la granja, native to the region Asturias — with pork — typically bacon (tocino) and/or sausage (chorizo). One of Spain’s most famous/popular comfort foods.
At Casa Armas, the fabada asturia was excellent. The luxuriously soft and sweet beans paired perfectly with the rich smokiness of the chorizo. Similar to, but better than, the lentil soup (see generally 6.051 Lentejas con Chorizo). With a nice baguette, this could make for an awesome stand-alone meal.
