Baliwag (see generally 6.210 Liempo) may very well be my favorite BBQ joint of all-time, anywhere in the world.

Perfection.  Exquisitely juicy and tender meat, especially the breasts.  The skin, lean and mean, fat dripped off through the rotisserie process.  Seasoned in a delicate soy-based marinade, enhanced by traces of smoke flavor from the coals, as well as the bundle of aromatics stuffed in the cavity.  Quite possibly the best chicken BBQ that I’ve ever experienced.
