Deep-Fried Oolong Tea-Smoked Chicken

One of the top two chicken dishes that I’ve had in the Philippines (see also 5.150 Roasted Chicken…) — both among the best in the world — the difference being that this one came with sauce, much juicier as a result, though without the contrasting crispy texture.
