Tortilla Dogs with Red Cabbage Salad

Red cabbage is quickly becoming my favorite veg (see most recently 7.087 Tofu, Egg, and Doenjang Stir-Fry; see generally 7.030 Romaine Salad…).

Here, it was flash-pickled with salt and red wine vinegar, standing in for, but absolutely nothing like, sauerkraut.
