Callos is a Spanish meat dish. Beef tripe (callos), often with sausage, plus chick peas and bell peppers, typically in a tomato sauce. As a tapa or main dish.
At Casa Armas (see most recently 7.092 Lomo con Pimientos), the callos is quite good. The tripe itself, clean flavor, more about the chewy texture. Chorizo adds a salty-smoky kick. Nicely balanced sauce, excellent with the free bread.
