Romesco is a Spanish sauce. Consists of roast peppers and nuts, typically almonds or pine nuts, plus tomatoes, onion, garlic, spices, often breadcrumbs. Traditionally served with fish/seafood, but works with meats.

My first attempt turned out too chunky in texture, too pale in color, too bland in flavor.
