Pan-Seared Maya Maya in Romesco Sauce with Saffron Risotto

Maya maya – from yesterday (see generally 8.079 Maya Maya Jiri Tang).

Romesco sauce – first stab, not too bad, but needs work.

Risotto – saffron never fails; shocked that I haven’t made a risotto for dinner in over 6 years (see 2.066 Risotto with Pan-Seared Scallops…), or at least I can’t seem to track down a more recent post.
