Blackened Maya Maya with Caesar Salad

with solo + IZ
With the snapper from before (see 8.080 Pan-Seared Maya Maya in Romesco Sauce…). Even after nearly 2 weeks on ice, the fish was still magnificently firm and juicy and tasty – my cooking technique may have played a role.
Intended to be a late-nite solo meal, but IZ sniffed the goods and crawled out of bed to partake.
