Trying to encourage IZ’s newfound interest in sushi – as yet, at 5.5-yrs, he’s just getting into some of the cooked stuff – I tried making his favorite.
Someone once told me that sushi chefs are tested on their skill in making tamago (egg omelet), which requires precision in seasoning the eggs to a delicately balanced sweet-savory, thoroughly beating then straining the eggs, lastly cooking and rolling the eggs with precision into a seamless cake.
I think I got the flavor okay, but messed up the beat-cook part.
Nevertheless, IZ seemed impressed.
