The pork was amazingly tender and juicy – attributable both to the Iberian pluma loin cut, famous for tenderness, and the skill of the chef – simply seasoned, served on a bed of salsa, which brought out the natural sweetness of the meat, and topped with arugula, which enhanced the charred flavor.
Happy to confirm that Sala Bistro (see most recently 5.041 Slow Roasted Beef Brisket with Cauliflower Cheese) continues to deliver the goods.
