Grilled Iberico Pork Pluma
at Sala Bistro

The pork was amazingly tender and juicy – attributable both to the Iberian pluma loin cut, famous for tenderness, and the skill of the chef – simply seasoned, served on a bed of salsa, which brought out the natural sweetness of the meat, and topped with arugula, which enhanced the charred flavor.
Confirming that Sala Bistro – the first French restaurant ever featured on GMTD (see 5.041 Slow Roasted Beef Brisket with Cauliflower Cheese), still hard to believe – delivers the goods.
