Beef Enchiladas

Enchiladas have been a regular item these days (see most recently 8.339 Beef Enchiladas), not because we like them that much, or I’m very good at them, or I’m trying to get good at them – in fact, I think that we’d all be quite happy if I were never to make them again – but I’d purchased a huge pack of corn tortillas, and I don’t know what else to do with them, don’t care enough to try something different – I hate having to make the same thing over and over to use up excess ingredients (see also 9.007 Bacon Cheeseburger).
