Can’t believe it’s been nearly 6 years since I last made this (see most recently 3.078 (Tyler Florence’s) Dad’s Meatloaf with Tomato Relish).

The thick cut artisanal bacon got frisky and curled at the edges, unlike thin sliced factory bacon, which tends to play dead.
