A shade of improvement, even though I haven’t made adobo in over two years (see most recently 8.121 Chicken Adobo). The family seemed to enjoy it.
I realized that pork belly isn’t a good cut for the dish, however, because too much fat renders into the sauce.
I’m going to need professional assistance to take it to the next level.
