Baked Rigatoni Arrabiata
-Dasmariñas Village, Makati, Manila, Philippines-
with the Family
Arrabiata is an Italian sauce. Tomato sauce with dried red chili. When previously encountering dishes in restaurants labelled on the menu as “arrabiata,” which seemed to be nothing more than spicy tomato sauce, I thought “there has to be more to it than this” – apparently not.
Intended to make a baked ziti recipe, only to discover that the store didn’t carry ziti – yes, I said it out loud: “So what, no fuckin’ ziti now?”
The boys, who had just been griping about having to eat pasta “every day,” were suddenly enthused when I got them to participate in the cooking – really does work.
Not bad, though it turned out kinda dry, especially the bread crumbs on top.
