Participants of the consultation, including colleagues from Yonsei University, as well as the venerable Prof SB, met up for a casual dinner at the hotel.
This second experience with ostrich (see most recently 7.170 Lemon-Crusted Ostrich Fillet with Merlot Reduction) confirms that it tastes like beef.
