Scallion-Steamed, Pan-Seared Bossam with Doubanjiang Dip in Lettuce Wraps

Same method as before (see previously 10.256 Scallion-Steamed Bossam with Buchu Kimchi in Romaine Wraps), confirming that a post-steam pan-sear takes it to the next level.
Improvised a dip with sesame oil, scallions, and Chinese doubanjiang (chili bean paste) – finally, another application beyond mapa tofu (see for example 10.130 Mapo Tofu with Rice) – which ended up tasting like a Chinese-ish ssamjang (see for example 9.066 Samgyeopsal with Ssamjang).
