In making jjajang myeon at home, I’ve always focused my effort on the sauce, typically taking an instant sauce packet and adding meats and vegetables to get it close to the real thing, never putting much thought into the noodles (see most recently 11.084 Jjajang Myeon).
For the first time tonight, I tried fresh (frozen) noodles made for jjajang myeon. What a difference – quantum leap towards the real thing.
