Braised Doenjang Mugeunji

Good to be back, first time since quarantine.  Just IZ and my mother – the rest of the family, apparently, had better things to do in the city.

One of the best times to visit the cabin is in late July, just after the monsoon rains, when our stream is filled with running water.

Mom made braised mugeunji (old kimchi) in doenjang (fermented bean paste).  The complexity of the kimchi and the nuttiness of the bean paste formed a perfect synergy of flavors, a perfect balance of salty, spicy, sour.  As a topping for steamed rice, nothing more, it made for an utterly satisfying meal.
