Doenjang Jjigae with Golden Enoki

10 years ago, I had purchased a pack of golden enoki and used them a couple times to immense satisfaction (see 2.070 Shabuki with Shrimp and Golden Enoki; 2.066 Risotto with Pan-Seared Scallops and Golden Enoki Mushrooms), but then for no reason never bothered to do so again.
Just as I remember, the golden enoki are amazing. Intensely aromatic and a bit firm.
Following the duck application a couple days ago (see 12.026 Pekish Duck), I used the golden enoki in tonight’s doenjang jjigae, which felt just a bit more special as a result.
