Cheesy, Spicy Black Bean Bake

Another inspiration from The New York Times (see Cheesy, Spicy Black Bean Bake).
It was super easy to make, with cheap pantry ingredients, done in 20 minutes.
It turned out awesome. Punchy beans, gooey cheese – perfectly paired with salty, crunchy tortilla chips. Even better topped with fresh cilantro for brightness and a slice of jalapeño for kick. An instant classic, family favorite.
Next time, I’ll build the cilantro and jalapeños into the dish, and maybe add sour cream.
