Mackerel & Clam & Potato Stew

This was an adaptation of a recipe from The Family Meal that I had long ago attempted (see 3.157 Mackerel & Potato Stew). Inspired by yesterday’s dish at Brunch & Osteria (12.173 Pesce), I tried to intensify the flavors of the stew by using anchovies, tomato paste, and loads of red chili flakes, as well as clams for the stock.
However, even though I had seasoned the pieces of fish in advance of placing them into the pan, they still turned out bland (more salt next time, and for longer). And a tad fishy (next time, pan-sear them first).
And somehow, despite all the aggressive seasonings, including a swirl of sour cream at the end, the soup was also bland and fishy.
On the bright side, MtG has promised to teach me how to make the pesce dish.
