Mul Naeng Myeon (à la Hubris)

The mul naeng myeon at this restaurant is perfect. It is the ultimate rendition of my favorite dish of all time.
I take offense when I see someone add mustard or vinegar, or cut the noodles with scissors, thereby altering the perfection of the dish as served.
That said, having been a dedicated fan since the restaurant’s opening, I believe that I’ve earned the right to play around.
And so, I attempted to improve upon perfection by adding a dollop of the sauce that’s served with mandu, a melange of gochugaru + garlic + mustard etc.
It turned out okay, providing a slight kick to the broth, while preserving its savory beefiness. Thanks for accommodating the attempted hubris, but I’ll refrain henceforth and take perfection as is.
