Encouraged by a recent success with chicken burgers (see 13.066 Chicken Burger), I applied the same process to cheese tonkatsu.
It worked, perhaps even better. Same toppings as before, but with a dressing of tonkatsu sauce + mayo. The cheese, conveniently contained within the patty, came out hot (be careful) and gooey. Nice.
Fish katsu is next.
