I can’t recall if I’ve made golbaengi in my life, certainly not in GMTD history. But W, who had brought home a can of the snails, asked me to make it as a late afternoon snack, so I free-styled the dish with ingredients on hand.


It turned out okay. Unfortunately, I didn’t have any cucumbers – in my opinion, the ideal vegetable accompaniment, which provides a nice crispy counterpoint to the snail’s chewiness – but the iceberg lettuce core was an adequate substitute. If I never have to make (or eat) the dish again, I wouldn’t be disappointed.
