Whereas GMTD’s first post on this restaurant featured whole cuts of lamb ribs (13.122 Premium Yang Galbi), the the house specialty is lamb skewers (ggochi), made from smaller bits of lamb.

The metal spits have cogwheels that fit into a track that is automated to move slowly back and forth, rotating the skewers to ensure even cooking.

W wanted to try the dak ddongjib (chicken gizzards), which also came as skewers.

Cooked skewers are placed on an elevated rack, which keeps them warm.

Never been a big fan of gizzards, though I do have distinct memories of the 2 occasions when they were featured on GMTD (see 4.223 Wonjo Bindae Ddeok; 6.035 Ulkeun Chicken Gizzaed).
