Years ago, I made Spanish tortilla (6.057 Tortilla Improvisado), but not again since, even though it’s one of my favorite Spanish dishes, so easy and convenient and cheap, sure to be a family-pleaser.
This time, I was inspired to make the dish after watching Chef Kenji do it on his YouTube cooking show (see Spanish Tortilla).

Beyond the dish itself, the biggest takeaway from the episode was Chef Kenji’s “cheaty” aioli made with pre-made mayo + olive oil + garlic. Not exactly like the real thing – still tastes like pre-made mayo – but close enough for something that takes seconds to whip up with a teaspoon in a bowl.
