My third home-made pho (see most recently 11.199 Brisket Pho), this time with noodles and soup powder brought directly from Vietnam by my friend EE, who had come to Seoul for a conference a couple months back (see most recently 13.174 1++ Ggot Galbi Set).
Recalling the undercooked beef on the prior attempt, I parboiled the brisket for about 30 seconds in the boiling broth, just before serving. In addition to tenderizing the meat, the parboiling provided an extra layer of rich beef flavor to the soup.
