Tonkotsu Ramen

Tonkotsu Ramen is a noodle product by Pulmuone. The package contains ramen noodles (“naturally dried”) + stock concentrate (presumably from boiled pork) + dried garniture (scallion flakes, sesame seeds).

I poached an egg in the boiling soup and tossed in a handful of buchu at the end.

Hit and miss. The soup was weird, couldn’t quite place the flavor, but it wasn’t pleasant. The noodles were very nice, chewy and toothsome – I see a future application, perhaps a Chinese stir-fry, just using the noodles. No good as a dish per se but worth discovering a promising ingredient.
