While gochujang jjigae tends to be associated with the squash – either aehobak or zucchini – I’ve always thought that the dish was more about the potatoes, which pair so seamless with the sharp flavor of the chili paste and provide starchy texture to the broth.

The dish also seems to be more of an anju found at pubs, rather than a meal served at restaurants, even though I’ve always felt that the broth screams for steamed rice.
