Seared Cod Tacos with Hand-Made Tortillas

With the final bit of dough that had been developed for mushu pancakes (see most recently 15.207 Mushu Chicken with Hand-Made Pancakes), I made tortillas, which worked out even better.  Rustically rough and uneven, chewy yet tender.  If cooked in lard, the tortillas would’ve been as good as anything made by a Mexican abuela.

Improvised with sliced cod fillets from IKEA, seasoned with Old Bay Seasoning + Lawry’s Seasoned Salt, seared in butter, topped with spicy cabbage slaw and a drizzle of Tapatío.

Totally legit, my best tacos ever.
