From that monster ribeye that I’d purchased whole and portioned out for different applications back in May (see generally 15.127 Roast Ribeye Au Jus), this was the final bit: 500 grams of odds and ends, including fat to approximate an 80:20 blend, set aside for use either in burgers or ragu sauce.

New toy: a patty smasher, better in size and control than that grill press from before (see 15.135 Oklahoma Onion Smashburgers).

Having run out of pickles, I tried sauerkraut for a touch of acid – kinda worked but pickles preferred (need to go on a Costco run).
