Doenjang Guk with Bomdong & Eggs

A quiet Monday evening ATKAHM (a typical Korean at-home meal), mostly with weekend leftovers.

Bomdong (봄동) is a vegetable. A type of cabbage, similar to napa cabbage, but with greener leaves that splay out rather than forming a head, slightly more fibrous in texture, slightly more bittersweet in flavor – perfect for doenjang guk. Only comes out in winter, despite what the name – “bom (spring)” + “dong (frost)” – would suggest.

I made a fresh pot of doenjang guk, stock from the lobster tomalley that I’d saved from Saturday (see generally 15.383 Steamed Lobster), plus loads of bomdong and eggs poached in the broth.

The soup was really good, though the lobster didn’t really contribute much except perhaps a subtle layer of depth.
