Chuck Roast in Marsala Gravy

On this 3rd and final attempt at roast beef with chuck eye roll (see also 15.152 Roast Chuck Eye Roll Au Jus; 15.344 Roast Chuck Eye Roll), I declare that the cut is a lost cause.  The meat was so tough that I couldn’t slice it properly, leaving large uneven chunks.

Also decided that the bulk savings on the additional meat (e.g., for stews, burgers) isn’t really worth the hassle.
