With my new oven, I’ve been roasting a lot of chicken these days (see most recently 17.242 Roast Chicken with South Carolina Mustard Sauce and Hot Chili Peppers), always spatchcocking the bird to facilitate the process. Which leaves me backbones, collecting in a ziplock bag in the freezer. With a critical mass of 8, I made stock – not just any stock, but supercharged roasted stock.
For the dish with the chicken stock supreme, I made chicken noodle soup. It was intense.
