Slowly but surely, I’ve been downsizing the volume and variety of items in my pantry and fridge, which are significantly smaller than the set-up in our previous home.

So tonight, to use up some powdered ingredients that I look forward to finishing and never restocking – namely, cayenne, chili, smoked paprika, and nacho cheese – I made a big batch of taco seasoning, amalgamating various on-line formulations.

I will always continue to stock ground cumin, garlic powder, onion powder, and dried oregano.

It was good.  One more round, adjusting the salt, the seasoning should be ready for sharing: both the recipe on GMTD, and the stuff itself for friends/staff.

With shredded lettuce + pico de gallo on a grilled (of course) tortilla.

In doing the research, I discovered an interesting hack: add a pinch of baking soda to ground beef, which (for reasons that I now forget) makes the meat brown much more quickly and deeply.
