Totally forgot about “The Breakthrough,” almost exactly 2 years ago (see generally 15.270 Oyakodon – The Breakthrough), so the eggs turned out mushy and lumpy.

On the bright side, rather than deep-frying the skins separately (see for example 16.161 Oyakodon Deluxe) or just discarding outright, the thighs were cooked skin-on until crispy, sliced into strips, then nestled on top of the eggs as they cooked, so that the skins remained crispy.

Next time, I’ll combine both techniques.
