Mapa Tofu with Chicken Breast

Mapo tofu is a Chinese dish. It consists of cubed tofu and minced aromatics, and often ground pork, stir-fried in a sauce consisting primarily of doubanjiang (fermented soybean chili paste). The spicy/salty/nutty flavor of the bean paste pairs well with the soft/subtle/nutty flavor of the bean curd.
The chicken breast here didn’t really contribute much to the dish. (When ground pork is added, it sops up and carries the sauce in every bite.)
