Spaghetti al Pomodoro with Sun-Dried Tomatoes, Black Olives, and Parmigiano-Reggiano

With all the extras, I don’t know if this dish remains “al pomodoro,” a simple pasta dish typically consisting of just fresh tomatoes and basil and olive oil, but my limited knowledge of names for Italian dishes leaves me little choice.

This was the first time employing the technique of shaving the cheese, as opposed to grating.  I used a vegetable peeler.  Very effective in terms of taste and texture and presentation.
