Tofu & Eggplant Jjigae

Whereas sundubu jjigae = silken tofu, Pulmuone’s soup base for subdubu jjigae works fine with firmer forms of tofu (as here), though of course the texture will be different (see also PULMUONE).
Eggplant isn’t a traditional ingredient for any Korean soup, but why not, even though I despise eggplant.
