Soup Dishes

Soups fall into 4 broad categories: (i) guk (국), characterized by a light broth, usually cooked in a large pot and served in individual bowls, often as a side dish in a larger spread; (ii) tang (탕), characterized by a hearty meat/fish-based stock, usually cooked in a large pot and served in individual bowls, often as a standalone meal; (iii) jjigae (찌개), characterized by a thick broth and chunky ingredients, usually cooked and served in a small pot shared by all, often one of the main items in a larger spread; (iv) jeongol (전골), characterized by ingredients, usually cooked in a large flat pot at the table and served as the ingredients cook, often the meal centerpiece.  Whereas the terms are often interchangeable, sometimes used incorrectly, the dishes below are categorized according to what they should be called.  Noodle soups can be found in NOODLE DISHES (supra).
