Pan-Grilled Pork Chops with Wild Porcini Salt

I acquired a jar of Dean & Deluca’s Wild Porcini Naturally Flavored Sea Salt (see generally 3.086 Pan-Seared Ribeye with Wild Porcini Salt).
However, in using the salt for grilled pork shoulder, I made the mistake of first tossing the meat in the salt then cooking it, rather than serving the salt on the side or sprinkling it on top, which would’ve emphasized its taste and preserved its texture. It was still good, but not spectacular.
Nanny 7 started this evening. I’ll refrain from commenting further.
